Note two things:
most of these already existed, as requested by Alex and Billy and created on 2022-01-27. I did create a handful that were not there yet.
You have your channel nomenclature backwards
track/risk/branch, so pacific/stable and not stable/pacific. Further, tracks are just e.g. pacific, octopus, etc - the risks under each track exist magically.
I suggest a quick skim of https://ubuntu.com/blog/controlling-snap-releases-with-channels-tracks-and-branches-part-1 for a refresher, the channel model in Charmhub is exactly identical to that of Snap Store.

Ah indeed, thanks @roadmr! I keep confusing them because we back the tracks with git branches such that changes landing on the stable/pacific git branch should get automagically pushed to the pacific/edge track
